Whole Wheat Bread Recipe (It's so moist! I love it!!!)

Ingredients
4 cups warm water
2 packets yeast
1 tsp sugar
2 eggs
6 T honey/brown sugar
3 tsp salt
9 T vegetable oil
9-10 cups whole wheat flour

Instructions
1. Mix the warm water, yeast and 1 tsp sugar together in a bowl and let yeast bubble for a few minutes.
2. Beat the eggs until well-mixed. Add brown sugar, salt, and vegetable oil and mix well.
3. Add the yeast mixture and mix.
4. Slowly add the flour (I add a few cups, mix, and then add some more). The dough will be a sticky dough, so don't add too much more flour. (I grind my own wheat flour so sometimes it seems I may need an extra cup or two because it's so fluffy).
5. Knead by hand for about 3-5 minutes.
6. Let rise for 45 minutes.
7. Punch dough back down and divide into 3 loaves. Place the loaves in greased bread pans and let rise for about 1-1.5 hours.
8. Cook at 350 degrees for about 30-35 minutes. (I'm still experimenting to find the perfect time...)

Grape Tomatoes & Chicken over rice

Ingredients
Enough olive oil to thinly coat the bottom of your skillet
1 T basil
2 large chicken breasts
Salt and Pepper to taste
1 1/2 cup white grape juice
1 1/2 cup chicken broth
1 T Italian Seasoning
1 T Balsalmic Vinegar
1-2 cups grape tomatoes chopped into quarters

Instructions
1. Heat the oil and the basil over medium high heat. While the oil heated, I sliced my chicken into thin fillets (I got 3 from each breast) and rubbed them with salt and pepper.
2. Brown both sides of the chicken in the oil (about 5 min).
3. Add white grape juice, chicken broth, Italian Seasoning, and Balsalmic Vinegar (we also added a little corn starch but if you don't mind a really runny sauce, then you can leave it out :). Cook on a low-medium heat until the chicken is done cooking (15-20 minutes).
4. Add the grape tomatoes and cook until they are hot as well.
5. Serve over rice. (We cooked up 1 cup of rice to go with it).

At first my husband and I thought it was just a "good" meal, but by the end of the meal we were both loving it.

Super Easy Melt-in-your-mouth Roll Recipe

Ingredients:
1 cup warm water
1/2 cup sugar
1 T yeast
Combine above ingredients and let bubble. Then add:
1 tsp salt
1 egg
1 1/2 cup flour
Mix then add
1/3 c softened butter (It won't be the same with margarine...)
Mix then add:
2 cups flour
 
Directions:
Cover and let sit for one hour in a warm place. Roll out as 24 golfball-sized rolls on one large cookie sheet. Let rise until they double in size. Cook at 350 degrees for 8-10 minutes. Brush with butter right when they come out of the oven.
 
This dough is a sticky dough... it's A LOT easier with a kitchenaid (or bosch).
